Yes. Every style fills the area first, so the secret's pixels are gone. Blur and Mosaic are then drawn from made-up text, never from the secret, so there is nothing to un-blur.
No. Text recognition runs on-device and screenshots are never uploaded. Redact Guard only connects to the internet to check for updates (at most once a day, or when you ask) and once to activate your license.
In the Journal on your Mac, so you can undo a redaction. They are deleted after 24 hours by default (you can pick 1 hour to 30 days). Screenshots with nothing sensitive are never stored.
